Ingredients

  • 1.2 Kg Zappfresh Mutton Curry Cut

  • 150 gms Yogurt

  • 150 gms Ghee

  • 10 nos Green Cardamom

  • 4 nos Black Cardamom

  • 2 nos Bay Leaves

  • 250 gms Onions

  • 50 gms Ginger Paste

  • 50 gms Garlic Paste

  • 25 gms Coriander Powder

  • 5 gms Red Chili Powder

  • 3 gms Turmeric

  • 400 gms Tomatoes

  • 20 gms Ginger

  • 20 gms Garlic

  • 10 gms Cumin Powder

  • 4 nos Whole Red Chillies

Methods

Raarha Meat, also known as Mutton Rara or Rara Mutton. This mutton curry is a wonderful curry, scrumptious, possessing exceptional tastes of their own, which is not very spicy. This curry has a superb blend of whole spices included into the curry infusing the gravy with its quality into the mutton, in addition to a few other included spices. This recipe is a classic example of the art of bhunao in Indian cooking.

PREPARATION:

THE MUTTON: Unwrap your scrumptious Zappfresh Mutton Curry Cut.

THE MARINATION: Whisk yogurt in a large bowl, add salt, mix, and leave the mutton in this marinade for at least 90 minutes.

THE VEGETABLES: Peel, wash, and chop onions. Wash and chop tomatoes. Scrape, wash, and roughly chop the ginger. Peel and roughly chop the garlic.

COOKING:

Heat the ghee in a handi, add green cardamom, black cardamom and bay leaves, saute over medium heat for 10 seconds, add onions and saute until light brown. Add the ginger and garlic pastes, stir until the moisture has evaporated, add coriander, red chili powder, and turmeric, stir. Then add Zappfresh Mutton Curry Cut, along with the marinade, bring to a boil, reduce to low heat, cover and simmer until tender. (Keep adding 30ml of water at regular intervals to ensure that the meat does not stick). Now add tomatoes, chopped ginger and chopped garlic, stir and bhunno until the mutton is napped in the masala. Add cumin and whole red chilies, stir for a minute. Adjust the seasoning.

TO SERVE:

Remove to a flat dish and serve with Tandoori Roti.

*bhunao: A combination of light stewing, sauteing and stir-frying. It is the process of cooking over medium to high heat, adding small quantities of a liquid, water or yogurt, to prevent the ingredients from sticking, which also makes it necessary to stir constantly.
